Onion soup with goat cheese and croutons

A warming dinner idea: a simple yet exquisite onion soup accompanied by croutons topped with goat’s cheese!

Ingredients

  • – 1.5 kg onion
  • – 2 tbsp butter
  • – 1,5 kg onions
  • – 2 tbsp butter
  • – 2 l vegetable broth
  • – 250 ml dry white wine
  • – 2 bay leaves
  • – 3 cloves of garlic
  • – 1 teaspoon dried thyme
  • – 1 teaspoon salt
  • – 0,5 teaspoon pepper
  • – fresh thyme (for serving)

 

ingredients for cheese croutons:

  • – a few slices of Goat Farm natural goat cheese
  • – fresh baguette

Method of preparation

Heat the butter in a saucepan, add the chopped onion and finely grated garlic.

Stir-fry until the onions are browned.

Add the wine and spices, cook uncovered for about 10 minutes until the alcohol has evaporated.

Then add the stock and cook for a further 10 minutes.

Cut the baguette into slices and place in an oven preheated to 200 degrees for about 10 minutes, until browned.

Remove the baguettes, place a slice of goat’s cheese on each, and bake for a further minute until the cheese has melted.

Serve the finished soup with the croutons and fresh thyme.
