Prepare a unique dish.
Peel the potatoes and cut them into walnut-sized pieces. Place in a small frying pan, add olive oil and fry over a medium heat. After 15 minutes, when the potatoes are soft, remove them from the oil and allow them to cool.
Meanwhile, whisk the eggs in a bowl, add a pinch of salt, the potatoes and the grated cheese. Mix everything together and pour into a frying pan with some of the oil left over from heating the potatoes.
Fry the tortilla for 5 minutes on one side, then slide it onto a lid and place it in the pan on the other side. We give it a minute or so, then transfer it to a plate and cut it into triangles after about 5 minutes.
Sprinkle with grated cheese and fresh herbs!
